Coconut Milk Rice Recipe (Nasi Lemak)
Coconut Milk Rice (Nasi Lemak) is undoubtedly the national dish that represents Malaysia and most probably the most popular traditional dish in Malaysia, to locals and foreigners alike. It is one dish that binds everyone together, despite the wide diversity of cultures and cuisines in Malaysia.
Ingredients
1kg rice
6 cups of water
200ml coconut milk
3 pandan leaves / screwpine leaves
1 ginger
1 tablespoon of sugar
1 tablespoon salt
Preparation
Rinse the rice and drained.
Place the drained rice in a rice cooker.
Pour 50ml (1/4) of the coconut milk into a measuring cup.
Then dilute with some water.
Add in salt and sugar and stir to mix.
Pour the coconut milk mixture into the drained rice in the rice cooker.
Add in additional water to make sure the volume of the watery coconut milk is the same as the rice in volume (Altogether is about 6 cups).
Lastly add in crushed ginger, lemongrass and screw pine leaves.
Switch on the rice cooker and cook the rice.
When the rice reaches warming stage, add the balance (150ml) of the thick coconut milk.
Stir the rice. Close the lid and continue cooking until done.
Fluff up the rice and serve it hot.
Coconut Milk Rice Recipe (Nasi Lemak)
Coconut Curry Chicken with potatoes is not only a super flavorful dish, but it's also easy to make and healthy food. You are going to get so hungry cooking this because the coconut milk smells amazing!
Ingredients
4 boneless chicken thighs cut into 1 1/2-inch pieces
1 cup of onions, sliced
1 white potato, cut into 1-inch cubes
5 cloves of garlic
200ml of Coconut Milk
4 tablespoons of curry powder or curry paste
4 tablespoons of cooking oil
Salt, as desired
Preparation
Cut potatoes into small cubes, slice up onions, chop garlic, cut chicken into small cubes.
In a large skillet, in low heat up 2 tablespoons of cooking oil.
Once it melts, add curry powder in there. Swirl it around until well blended.
Then dilute with some water.
Add in coconut milk. Mix well.
Add potatoes to the coconut curry blend, bring to a boil and then let it simmer.
While it's simmering, in a separate pan, add 2 tablespoons cooking oil and saute the garlic and onions.
One the onions are translucent, throw in the cubed chickens. Cook lightly for 3-5 minutes.
Remove from heat and the meat, onion, and garlic mixture to the coconut curry blend.
Let it cook for 20-30 minutes or when the potatoes and chicken is cooked thoroughtly.
Serve it hot.
